Bakery style scones made better at home! Using fresh vibrant pears and rich dark chocolate, these turn out light and fluffy with delicious buttery flakes like any good pastry should have. A simple one bowl recipe that comes together quick- perfect for a fancy brunch or an every day snack. This seemingly unlikely combination is one of my all time favorites.

Ingredients:
- All purpose flour
- Baking powder – leavening agent for rise
- Salt – sea salt or pink Himalayan
- Butter – use frozen butter and grate with a cheese grater to get small pieces that will create airy pockets in the scones while baking
- Yogurt – greek or plain yogurt, or use heavy cream
- Sugar – organic cane sugar, just enough to add a bit of sweetness
- Vanilla – pure vanilla extract
- Pears – not overripe because they’re going to need to hold some shape while mixing and baking, chop into about 1/2 inch pieces
- Dark Chocolate – chips or chunks, I like to lightly chop the chunks so the chocolate is speckled through the scones. The higher cocoa content of dark chocolate gives an element of richness, but semi-sweet also works well!
- Heavy cream – brushing cream on top is what gives scones their signature crisp shiny top. These scones aren’t getting a glaze (though you absolutely could!) so a sprinkle of sugar on top gives a nice pretty crust
Preheat your oven to 400 degrees and line a baking sheet with parchment paper.
Mix the dry ingredients together in a large mixing bowl, add in your frozen grated butter and mix. In a measuring glass, mix the yogurt, egg, vanilla and add to dry ingredients.



Add the pears and chocolate, and use your hands to gently fold them in being sure to not crush the pears too much


Turn out onto floured surface and shape into a disk, using your hands to go around the edges creating a nice tidy circle. Cut into 8 even pieces and set on lined baking sheet an inch or two apart. Brush with heavy cream and sprinkle with a tiny bit of sugar. Bake in preheated oven oven for 15-17 minutes

Pear & Dark Chocolate Scones
Soft and fluffy homemade scones with chunks of fresh pear and rich dark chocolate. This combination has just the right amount of sweet vs light- these make a perfect afternoon snack with tea or coffee.
Equipment
- Large mixing bowl
- Danish Whisk
- Sharp Knife
- Baking Sheet
Ingredients
- 1½ cups flour
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 3 tablespoons cold butter grated
- ½ cup yogurt greek or plain
- 3 tablespoon sugar
- 1 teaspoon vanilla
- 1 cup diced pears not overripe
- ⅓ cup dark chocolate chips or chunks
- 2 tablespoons heavy cream for brushing
Instructions
- Preheat oven to 400℉
- In a large mixing bowl, mix together dry ingredients
- Grate frozen butter and mix in
- In a measuring cup, mix the yogurt, egg, vanilla
- Add to dry ingredients and mix lightly (there may be some flour spots)
- Gently fold in pears and chocolate- use your hands to combine very lightly so as not to crush the pears
- Turn dough out onto floured surface and pat down into a disk about an inch thick, using your hands to form the outside edge into a nice tidy circle
- Use a sharp knife to cut into 8 even triangles
- Place onto lined baking sheet leaving space in between
- Using a pastry brush, brush heavy cream onto each scone and add a sprinkle of sugar on top
- Bake in preheated oven for 15-17 minutes
- Cool on rack and enjoy!
Notes
- This size of scone may be a bit large for children or those with a smaller snacking appetite, I sometimes like to divide the dough into two disks and cut each one into 6 pieces, equalling 12 smaller ‘tea’ size scones
- These scones store well at room temperature in a cake stand or any other container
- Make a double batch and keep in the freezer and set out overnight to thaw
