Soft and Fluffy Homemade Hamburger Buns

Another household staple to make from scratch with just a few wholesome ingredients! A simple yeasted dough recipe, so they’ll rise up quick to be ready in time for dinner. This makes a big batch of 12 buns, put the second half in the freezer to have perfect homemade buns for the next burger night.


Ingredients:

  • Bread flour – Bread flour has a higher protein content than all purpose flour which means more gluten is formed during the kneading process, creating a stronger, chewier structure in the final product. Aka ‘strong flour’
  • Dry active yeast – This is the leavening agent giving the bread rise.
  • Sugar – The sweetener primarily used to feed the yeast, helping it grow and speed up the rising process. It also helps with flavor and moisture, can be substituted with honey.
  • Olive oil – The fat source keeping the dough nice and soft. Can be substituted with melted butter or coconut oil, though coconut oil may change the flavor a bit.
  • Salt – Forgetting salt would be detrimental to the flavor, ask me how I know, hah!
  • Water – Filtered water, warmed up but not too hot to the touch, will activate the yeast.

In the bowl of a stand mixer fitted with the dough hook attachment, add your warm water and sugar. Sprinkle the yeast on top and mix. Let sit until the yeast has bloomed and looks foamy on top, about 5 minutes.

Add the rest of the ingredients (salt, olive oil, 5 cups of bread flour) and mix on low until the dough comes together and looks smooth. You can see in the second photo mine needed the extra half cup of flour to come together. Cover and let rise until doubled in size, 1-2 hours. To speed up the process or if your house is a bit colder, you can set it to rise in a turned off oven with the light on.

Once the dough has doubled, punch it down and turn out onto the counter. Divide in half. Then divide each half into 6 even pieces. Shape each piece into a round by pinching and gathering the dough all together on one end sort of like a little dumpling. Then gently pull the round along the counter towards you with one hand behind it to create tension. Turn and repeat this step until it forms into a nice tidy ball.

Repeat for the second half of the dough. Place each round in a well-oiled baking dish, cover and let rise until nearly doubled in size, about another hour. Get the oven preheating to 375 during this rise time.

Bake for 25 minutes. Top with some butter while they’re still hot to get shiny tops. Cool completely on a cooling rack, and build your perfect burger. Pictured here is my children’s favorite ‘plain with cheese.’

Ingredients
  

  • cup warm water
  • teaspoon dry active yeast (or one packet)
  • ¼ cup sugar
  • 2 tablespoons olive oil
  • cups bread flour
  • 1 tablespoon salt

Instructions
 

  • In the bowl of a stand mixer fitted with the dough hook attachment, add warm water one tablespoon of sugar, and yeast. Mix and let sit until foamy (about 5 minutes)
  • Add the rest of the sugar, salt, oil, and 5 cups of the flour
  • Mix on low speed until the dough is smooth and pulls away from the bowl. If the dough is sticking to the bottom still, add the last ½ cup flour. If it's still sticking add more flour a tablespoon at a time until it comes together. Total mixing time is between 5-10 minutes.
  • Cover and let rise until doubled, 1-2 hours depending on the temperature of your kitchen
  • Once doubled, turn out onto the counter and divide in half. Divide each half into six pieces (12 total buns)
  • Line 2 baking trays with parchment paper
  • To shape each bun, gather and pinch each piece (sort of like a dumpling) until it forms a dough ball. With one hand behind the dough ball, gently drag it on the counter towards you to create tension, Turn and repeat until a tight ball forms.
  • Repeat with all 12 dough balls and place 6 on each baking tray, leaving room for their second rise. Cover and let rise until they're a bit less than doubled, about another hour
  • While they're rising, preheat oven to 375℉
  • Bake for 25 minutes until they're golden on top, brush with butter right out of the oven
  • Cool before slicing in half and building your burgers!

Notes

  • For freezing: Store in a gallon freezer ziplock, take them out in the morning to come to room temperature and they’ll be good as new by dinner time.
  • Try slider buns by dividing each half into 12 and bake in a 9×13 baking dish for a mini version (24 total buns)
