In the bowl of a stand mixer fitted with the dough hook attachment, add warm water one tablespoon of sugar, and yeast. Mix and let sit until foamy (about 5 minutes)
Add the rest of the sugar, salt, oil, and 5 cups of the flour
Mix on low speed until the dough is smooth and pulls away from the bowl. If the dough is sticking to the bottom still, add the last ½ cup flour. If it's still sticking add more flour a tablespoon at a time until it comes together. Total mixing time is between 5-10 minutes.
Cover and let rise until doubled, 1-2 hours depending on the temperature of your kitchen
Once doubled, turn out onto the counter and divide in half. Divide each half into six pieces (12 total buns)
Line 2 baking trays with parchment paper
To shape each bun, gather and pinch each piece (sort of like a dumpling) until it forms a dough ball. With one hand behind the dough ball, gently drag it on the counter towards you to create tension, Turn and repeat until a tight ball forms.
Repeat with all 12 dough balls and place 6 on each baking tray, leaving room for their second rise. Cover and let rise until they're a bit less than doubled, about another hour
While they're rising, preheat oven to 375℉
Bake for 25 minutes until they're golden on top, brush with butter right out of the oven
Cool before slicing in half and building your burgers!
