I can never just throw way discard, so I’m always looking for simple ways to incorporate it into the day’s cooking. The recipe is by far the easiest way to use up discard without needing to put much thought into it, plus we get a wholesome snack- delicious crispy homemade crackers that can be customized to your liking. Parmesan, cheddar, everything seasoning, garlic, nuts and seeds, the options are endless.
Ingredients: discard, melted butter, salt. That’s it!
No chilling, no rolling, this recipe could not be simpler.

Gather your ingredients. Preheat the oven to 350 degrees and line a baking sheet with parchment paper. Melt the butter and let cool slightly. If your starter is in the fridge, take it out and let it come to room temperature before using or it will solidify the butter making it near impossible to spread (ask me how I know.) Prep whatever topping you’re using, here I’m using my favorite – finely grated parmesan cheese.
Measure out 200 grams of discard (about 1 cup.) Add melted butter and salt and mix well.


Spread it out on the parchment and use an off set spatula (or the back of a big spoon) to spread it evenly across the whole baking sheet, getting it as thin as possible. The thinner it is the crunchier the crackers will be, so try to make sure it’s super even throughout the whole thing.


Sprinkle your toppings evenly across the whole surface and bake for 10 minutes.



After 10 minutes, take it out and score into your desired cracker shapes. A pizza cutter is helpful, or a good sharp knife. I’ve also seen them cut with fancy shaped roll cutters which create pretty edged crackers.
Put it back into the oven for about 15-20 minutes or until they’re golden brown and firm to the touch. Start checking at 15 minutes and keep an eye on them to avoid burning.




Let them cool, break apart along the scored lines and enjoy! They’re great by themselves or on a tray with other charcuterie items.

Sourdough Discard Crackers
By far the simplest use of sourdough discard! Just three ingredients- discard butter and salt. Top with any toppings you can imagine- cheese, everything seasoning, seeds, nuts, the possibilities are endless

- Baking Sheet
- Off Set Spatula
- Pizza Cutter or Sharp Knife
Ingredients
- 1 cup sourdough starter- discard or active (200 grams)
- 2 tablespoons melted butter
- ¼ teaspoon salt
- ½ cup finely shredded parmesan cheese
Instructions
- Preheat your oven to 350℉ and line a baking sheet with parchment paper
- Mix room temperature discard, melted butter, and salt in a medium bowl
- Pour onto lined baking sheet and use an offset spatula to spread it across the parchment as thinly as possible
- Bake for 10 minutes
- Take out and using a pizza cutter or sharp knife, score the whole sheet into your desired cracker shape
- Continue to bake for 10-15 minutes until they're lightly browned and crispy, turning the baking sheet as needed to ensure even baking
- Let cool and break apart into crackers
- Once they're completely cooled, store in an airtight container
Notes
- If you have a pretty cutter of some sort that would really elevate the look of these crackers and turn them from a simple everyday snack to a fancy addition to a charcuterie board
- These crackers are super versatile and can be cut into most any shape and paired with endless toppings
- I store these in a large mason jar and they keep well up to a week
