PB Pepita Energy Bites

An easily adaptable recipe for energy bites (aka energy balls) for a quick and nutritious protein packed snack. Using staples like peanut butter and honey, plus extras like hemp and flax seed meal, these are great to have on hand for an easy grab and go option.

Ingredients
  

  • ¾ cup peanut butter
  • ½ cup honey
  • 2 tbsp butter
  • cup rolled oats
  • ½ cup oat flour, maybe a bit more depending on consistency (blend up some rolled oats)
  • ½ cup pumpkin seeds
  • ½ cup chocolate chips (I like to chop them a bit, or use mini)
  • ¼ cup hemp seeds
  • ¼ cup flax seed meal

Instructions
 

  • Over medium low heat, melt the butter together with the peanut butter and honey. Remove from heat as soon as butter is melted- we're not cooking the mixture. Set aside to cool while you prep the rest
  • In a large mixing bowl, add the rest of the ingredients and mix
  • Add the peanut butter mixture and mix it all up- you might need a bit more oat flour to make it come together
  • Use your hands to test if the mixture can come firmly into a ball. It should stick together without crumbling, but also not be too sticky
  • Form into balls and store in a container in the fridge. Using a cookie scoop with ensure perfectly even sizes but you can just grab and eyeball it too
  • Makes about 35-40 one-inch balls, store for a week in the fridge

Notes

  • Oat flour is easy to make in the blender, this recipe really utilizes its finer texture to hold the bites together. You could use quick oats instead.
  • You can create many different flavors with different mix-ins as long as you keep the basic ratio of essential ingredients the same (pb, honey, oats, oat flour)
  • Some flavor combinations we've loved: dried cherry & dark chocolate, dried cranberry & white chocolate, mixed nuts, coconut almond
  • They should generally be stored in the fridge but can last for hours if you need to bring them on the go without refrigeration
